Dr. T's Vegetable Medley (V, SF)

  • pasta of choice
  • 2 tbsp olive or canola oil
  • 2-3 cloves of garlic
  • 1 carrot - chopped
  • 1 small to medium onion - chopped
  • 1-2 cups of broccoli florets - chopped
  • 1 cup mushrooms - sliced
  • Cardini’s Caesar salad dressing to taste

Directions:
Begin boiling water for pasta of your choice for two people as per manufacturer's directions (noodle and spaghetti-type pasta work well). You will need to coordinate the time needed to cook the pasta with the time necessary to prepare the rest of the recipe so that they are ready at the same time.

Heat pan and add oil, then add garlic and onion and stir fry for 3-5 minutes. Then add mushrooms and carrots and stir fry for 3-5 minutes. Then add broccoli and stir fry for 3-5 minutes. Add to pasta and season with Cardini's. Enjoy.

Serves 2 people.
